Double Delicious Thousand Island Dressing

1 large egg, hard boiled½ c butternut squash puree2 T reduced fat mayonnaise2 T fat free sour cream1 pickle, cut in thirds1 t chili sauce¼ t salt¼ t paprika½ t garlic powder
Peel the hard boiled egg and discard the yolk.
Place the white in a mini chopper, along with the butternut squash puree, mayonnaise, sour cream, pickle, chili sauce, salt, paprika, and garlic powder. Blend until smooth.
Store, refrigerated, in an airtight container for up to 5 days.
Serving Size: makes 8 servings of 2 Tablespoons each
