15 Bean Soup, Low Sodium, High Protein and High Fiber

Ingredients
1 pkg of 15 bean soup3 medium carrots sliced1 medium onion, chopped4 cloves of garlic, mincedHunk of lean ham, approx. .5 to .25 lbs4 cups water or chicken stock (no salt variety)1 bag baby spinachThyme, rosemary, Mrs. Dash spicy seasoning and fresh ground pepper.
Directions
Either soak the beans overnight or put in pot and cover with water and bring to a boil. Let sit for 1 hour and drain. Add all ingredients to crock pot. 4 hrs on high, 6 hrs on low. Stir in greens when soup is done and let sit a few minutes until wilted.

Serving Size:�Makes 12-14 one cup servings. Freeze in plastic containers and once they're frozen remove from container and put a bunch in freezer bags.
