Frankie's Blue Vanilla Soy Icecream

Ingredients
- 3 large eggs- 1/4 cup sugar- 2 tbsp French Vanilla Coffee Creamer- 3/4 cup Half-n-Half - 5 cups Vanilla Soy Milk- 1 cup frozen blueberies (unthawed)
Directions
1. Pour soy milk into ice-tray and set in freezer for at least 2 hours or frozen solid. Once soy milk is frozen solid in individual ice cubes, start mixing the remaining ingredients.
2. In a bowl, mix eggs and sugar until stiff (may use a beater on low speed or whisk).
3. In a blender, add egg mixture, frozen blueberries (unthawed), creamer, half-n-half, and frozen soy milk ice cubes. Pulse 4-5 times, then set on low speed for 3-5 minutes or until well blended.
4. Serve right away, or set in freezer until desired consistency.
