1 Tbspn Olive Oil2 Garlic cloves diced1/3 cup chopped onion (I use yellow, but feel free to change it up)1 can Diced tomatoes no salt added with juice (about 3.5 cups)3.5 cups cooked white beans 1 + cup water1-2 Tbspn Basil1-2 Tbspn Oregano
Heat Olive Oil on Medium in a large deep skillet
Sautee diced carlic
After a minute or two add the onion and continue to sautee for another minute or two
Add the can of tomatoes, bring to a boil and then let simmer
Puree the white beans in a food processor or blender until very smooth - I find it important to add a cup or more of water to help the blending. process
Add the seasonings and beans - let simmer on med/low, stirring occasionally, until it is as thick or thin as you prefer. If it seems a little too thick add a little water and stir.
This is a really versatile sauce you can add more tomatoes or beans, you can also season it how you like it. I always add more salt because I think it needs it.
It also makes a nice arrabiata sauce. Use peperoncino when cooking the onions and garlic, just don't add the basil and oregano.
