Tilapia Vera Cruz

Ingredients
Trader Joe's diced and fire roasted tomatoes, 3.5 serving (can substitute Rotelle)Del Monte diced tomatoes, 3.5 serving *Tilapia, 16 oz Green Peppers (bell peppers), 1 cup, chopped Peppers, sweet, red, raw, sliced, 1 cup Garlic, 2 clovesOnions, raw, 1 cup, chopped *Canola Oil, 1 tbsp Jalapeno Peppers, .25 cup, sliced (can be fresh or from a jar)**can use fresh tomatoes and green chilies, green onions, and/or cilantro depending on what you have on hand**
Directions
Heat oil in large flat bottomed pan.
Add onions, cook until soft.
Add garlic and stir briefly.
Add both cans of tomatoes and bell peppers.
When bell peppers soften, add jalapenos.
Add Tilapia, covering fish with sauce.
Cook about 15 minutes or until fish is just cooked through.

Serve alone or over rice.
