Italian Sausage Bean Soup

2 T EVOOTurkey Italian Sausage, 1 pkg casing removed and browned2 cans cannelini beans1 jar Fire Roasted Red Peppers drained and chopped1 can fire roasted tomatoes1 large carton Kitchen Basic Unsalted Chicken StockSpinach,chopped frozen, 1 package (10 oz) thawed and squeezedOnion 1 medium, choppedGarlic, 6 cloves chopped
makes 8 2-cup servings
Using non-stick stock pot, heat 1 T EVOO
Remove casings, slice and brown sausage in EVOO, remove from pan and drain,
Add 1T EVOO and saute onion & garlic. Add salt, pepper, fennel seed, rep pepper flakes and rosemary to taste.
Add all other ingrdients and heat through.
