Ina's Panzanela Salad

Ingredients
1 small baguette - 8oz.2T olive oil1 Red Pepper, cut into big chunks1 Yellow Pepper, cut int big chunks1 English Cucumber, sedded (scoop out w/ spoon), cut into chunks2 Big, ripe tomatoes2T capersfresh basil1/2 red onion, slicedVinagrette1 clove garlic, crushed1/2 tsp dijon mustard3T Olive Oil3T White Wine Vinegar
Directions
Cut baguette into chunks like large croutons. Heat 2T olive oil in pan, then add bread. Season with salt and pepper. Toast until brown.
To make vinagrette, combine and whisk together the 4 ingredients. In large bowl, all all chopped veggies, top with toasted croutons and toss with vinagrette. Let sit for a little bit to soak in flavor - ENJOY! Serves 6.
