Chicken Mushroom Soup

1 medium leek4 cups chicken broth (no salt added)1 cup water1/2 teaspoon thyme6 ounces white mushrooms, sliced1 pound chicken breasts, cut into 1/2 inch pieces8 ounces brussel sprouts, halved
1. Clean leek and slice into 1/4 inch pieces.
2. Bring broth, water and thyme to a low boil in a large saucepan.
3. Add leek and mushrooms; reduce heat and summer until leek is softened.
4. Add chicken and brussel sprouts and simmer until chicken is cooked through.
5. Season to taste.
Serving Size: makes 4 (1 3/4 cup) servings
