Bruschetta

Ingredients
4 roma tomatoes, seeded and chopped2 tsp minced garlic2 tbsp dried basil1 tbsp black pepper1 tsp salt3 tbsp extra light olive oil1/2 cup Parmesan cheeseFrench or vienna bread, 8 slices (medium sized)
Directions
Combine tomatoes with garlic, basil, pepper, salt, cheeseand olive oil and let chill for 1 hour. Spoon onto sliced bread and bake on cookie sheet in oven 10-15 minutes at 450 degrees until bread is lightly crispy on edges and tomato mixture warmed thoroughly. Serve immediately.
