Spicy Italian Sausage Soup

1 tbsp. olive oil1 med. onion, diced2-3 carrots, diced2-3 stalks celery, diced3-4 cloves garlic, minced1 package Italian sausage1 package hot Italian sausage (both with casings removed)4 cans navy beans2 cans diced tomatoes (or one large can)2 containers beef stock (approx 8 cups)bouillon cubes if needed to add flavor
Sautee onion, garlic, celery and carrots in olive oil over med. heat. While cooking remove casing from sausage and roughly chop. Once veggies are softened (about 10 min.) add sausage and cook through. Once cooked add tomatoes, beans (rinsed and drained), and beef stock. Simmer for at least 45 minutes. Salt and pepper to taste. If needed add bouillon cubes with a little water while simmering.
