Butternut Mash

Ingredients
5 lb butternut squash1 cup unsweetened applesauce1 Tbls cinnamon 1 teas nutmeg2 Tbls lemon juice
Directions
Use large knife to slice butternut squash in half lengthwise.

Place cut side down in 9x13 baking dish. Put enough water to equal 1/2 inch around squash.

Bake at 350 for 1 hour. Until tender to fork.

Peel and remove seeds- and blend or use ricer to "mash" smooth. Add remaining ingredients and blend until mixed.

Makes 8 one cup servings.
