Gluten-Free Banana Bread Muffins

Ingredients
2 eggs3/4 cup sugar1/2 cup oil (vegetable, corn or canola)1 cup mashed, ripe bananas (the riper the bananas, the more intense the flavor will be)2 teaspoons baking powder1/2 teaspoon baking soda1 and 3/4 cup mix of equal parts Tapioca Flour, Garbanzo Bean Flour, and Potato StarchWalnuts (optional)
Directions
Mix all wet ingredients together. In a separate bowl mix dry ingredients. Mix together and pour into muffin pan lined with baking cups.

Cook for 20 minutes or until golden brown in 350 degree oven.
