Hot and Sour Soup with Buckwheat Noodles

Ingredients
1 tsp olive oil1 cup sliced mushrooms3 cloves garlic sliced1 tbsp ginger 2 tbsp sherry1 tbsp ponzu vinegar1/2 tsp chili flakes2 cups unsalted beef broth1/2 cup unsalted vegetable broth2 oz buckwheat soba1/4 cup each sliced scallions and cilantro
Directions
In a medium sauce pan, heat oil over medium heat. Add mushrooms and cook until brown. Add garlic and ginger in the last minute. Add sherry and scrape the bottom of the pan. Cook until sherry cooks off by 1/2. Add broths, vinegar, and chili flakes. Increase heat to medium high and bring to a boil. Add soba; cook 7 minutes or until done. Stir in scallions and cilantro.

Makes 1 LARGE serving.
