Curry Chicken Salad

Ingredients
2-10 oz. cans of 98% fat free chicken breast (OR 20 oz. equivalent in cooked chicken breasts)1 medium apple, chopped2 stalks celery, chopped fine1/3 c. raisins (unpacked)2 T. chopped walnuts1 cup fat-free plain greek yogurt (I used Chobani)1.5 T. yellow curry powder1/4 tsp Tumeric (optional)1/4 tsp Cayenne Pepper (or to taste)Salt & Pepper to taste*Recipe is easily adaptable with whatever fruits/nuts/dried fruits you have on hand! Try with grapes, craisins, pecans or cashews for variety.
Directions
Drain and rinse canned chicken breast and shred with fork.

In a medium bowl, combine chicken, chopped apple, celery, rasins, and walnuts. In a small separate bowl, mix greek yogurt with spices, and then combine with other ingredients.

Serve immediately, or chill for flavors to blend. (I like to make extra for leftovers the next day!) Enjoy in a whole-wheat wrap, or on bread or alone.

    I loved this recipe! It was hard to taste the nuts and the ( I used raisins) in the mix, may change it up a bit next time to fix that, maybe less chicken and sauce. Otherwise Yummy!!! - 9/25/20

    Thanks for sharing! I just had this for lunch on a whole wheat roll-up. It was yummy and filled me up! I like the crunchy sweetness that the apples add to the salad. The greek yogurt made me not miss mayo at all. - 5/21/11
