Potato - Leek Soup

Green onions, choppedOlive oilGarlicLeeksPotatoesChicken cooking stock
Directions
Saute onions in olive oil until transparent, add garlic and saute 4 minutes without browning, stirring frequently. Add diced leeks and saute another 4 minutes. Add chicken stock, bring to a simmer, then add potatoes and simmer until potatoes are fully cooked. Blend until completely pureed.
