Directions
Heat oven to 350, grease 2qt. casserole pan. In lg. pan boil water and salt, gradually stir in grits. Reduce heat to low, cover and cook 5 minutes, stirring occasionally.
Remove from heat, add 1 cup of cheese and butter, stir until melted. Add milk and eggs, mix well. Pour into pan. Sprinkle remaining cheese on toop. Bake for 1 hour or until golden brown, let stand 10 minutes and serve.

    I make this all the time in many variations. Try it with swiss and mushrooms and/or bacon bits. - 1/1/14
