Lentil, Barley N' Mushroom Soup

1. Heat oil in large saucepan over medium-high heat. Add leek and mushroom. Cook, stirring, for 2 - 4 minutes or until softened.
2. Add tomato, lentils, barley and 5 cups of cold water. Season with salt and peper. Cover, bring to boil. Reduce heat to low and simmer for 35 - 40 mins. Soup will thincken on standing.
Tastes best the next day.
