Orzo Turkey Salad

Ingredients
1 - 16 oz box orzo patas by Barilla1 - cup canned mushrooms4 oz. - canned/jarred roasted red peppers1 - cup scallions sliced thin1/2 cup jarred artichoke hearts (seasoned hot is best)4 - TBS garlic flavored red wine vinegar8 - TBS grape seed oil2 - cups fresh spinach1 - tsp sesame oilGarlic poweder, salt, pepper, cayenne, curry poweder to taste
Directions
Cooks pasta according to directions on box. Then drain and rinse with cold water.

While the pasta is cooking, chop and slice the turkey, scallions, artichoke hearts and roasted red peppers. Toss well in a large bowl and add drained canned mushrooms.

Once pasta is cool add to other ingredients and toss to mix well. Add oils, vinegar and spices to taste. Toss again, refrigerate to chill and enjoy.
