Espresso Protein Truffles

Ingredients
2 Tbsp instant espresso powder3 Scoops Chocolate Protein Isolate Powder1/2 cup Fat Free Ricotta Cheese1/4 cup Almond Butter1/4 cup PB2 with chocolate, prepared1 Tbsp + 1 tsp Sugar Free Torani Vanilla Syrup1/4 cup Chopped PecansTopping:1/4 cup unsweet cocoa powder1 Tbsp sugar
Directions
1. Mix all ingredients until thoroughly combined. The batter will be slightly stickier than Playdoh texture.

2. In a small bowl, combine cocoa powder and sugar. Mix until well combine; set aside.

3. Roll into walnut size balls and one by one roll in the cocoa topping mixture.

3. Place in fridge to firm before serving. Keep leftovers refrigerated.
