Lentil Soup (Weight Watcher Recipe)

6 oz. dried lentils4 cups water1 cup chopped onion1/2 cup each celery and carrots1 T. olive oil1/2 cup V-8 (or tomato) juice1/2 teaspoon saltDash black pepper1/2 teaspoon fresh chopped rosemary1/2 teaspoon fresh sage1/2 teaspoon chopped thyme
Put all ingredients in a slow cooker and cook 8-10 hours on low. Or alternatively, saute vegetables in olive oil, add lentils, water and seasonings and bring to a boil. Cook on low for 45-60 minutes or until lentils are tender. Makes 6-1 cup servings.
