Bulked Up Peppermint Espresso Truffles

2 Tablespoons instant espresso powder3 Scoops chocolate isolate protein powder1/4 cup fat free ricotta cheese1/4 low fat cream cheese1/4 cup almond butter1/4 cup PB2, prepared2 teaspoons peppermint extract1/4 cup pecans, chopped
1. In a food processor, combine all ingredients, other than pecans, and pulse until well mixed. Mixture will be thick. Stir in pecans. Place mixture in refrigerator for at least 30 minutes to harden.
2. Remove mixture from the container and working quickly, roll dough into small balls using hands. You should have about 24 total.
3. You may leave them as they are or you may roll them in additional toppings. Store in the refrigerator prior to serving.
