crustless leek-mushroom mini quiches

Ingredients
* Mushrooms, fresh, 400 grams * Onions, raw, 263 grams * Leeks, 3 leek * Grapeseed Oil, 3 tbsp * *All White 100% Liquid Egg Whites, 1 cup * Egg, fresh, 1 large * Milk, 2%, 2 cup * Mozzarella Cheese, part skim milk, 193 grams, gratedblack peppersaltdash of cayennegreek seasoning
Directions
Fry up onion, leeks and mushrooms in oil until soft. Mix the rest of the ingredients in a bowl. In muffin tins, add mushroom mix, then pour egg-milk cheese liquid on top. Bake for ca 30-40 min, check often at the end so it doesn't get burned on top.
