4 cups chopped yukon gold potatoes1 cup onion chopped3 T butter3 T flourcrushed red pepper flakes (optional)ground black pepper3 cups skim milk1 t. sugar2 cups chopped cooked ham
boil the potatoes until tender, then drain and reserve 1 cup of cooking liquid.
Saute the onion in the butter until tender. Add the flour and pepper and cook for a few minutes. Add the reserved cooking liquid, milk, sugar, and ham. Bring to a boil, then cover and simmer for 20 minutes.
Serving Size: Makes 7 1-cup servings
