Thick and Hearty Beef Stew

Ingredients
1 cup sun dried tomatoes (not in oil)1 1/2 lbs beef stew meat, bite size pieces1 medium red onion, cut into 8 wedges3 Tbs chili powder 2 cups water2 Tbs flour1 1/2 lbs red potatoes, cut in half2 Tbs cornstarch 1/4 cup water
Directions
Cover dried tomatoes with boiling water and let stand 10 minutes; drain and coarsely chop.
Mix flour and water together, set aside.
In crock pot mix tomatoes, beef, onions, chili powder, potatoes and carrots together. Pour flour and water mixture over stew.
Cook on high for 4 hours.
When done cooking mix 1/4 cup water and cornstarch together in small bowl and pour over stew, mix gently. Add balsalmic vinegar, salt and pepper to taste. Mix well and let sit 10 minutes, then serve.
Makes 8 servings, 1 cup each
