Chicken tacos

Ingredients
1 boneless chicken thigh1/2 cup chicken broth1/4 onion, sliced1/2 teaspoon chili powder1/2 teaspoon cumin1/2 teaspoon garlic powder1/8 teaspoon salt1/8 teaspoon pepper2 corn tortillascooking spray, 4 sprays1/4 avocado, sliced or cubed4 tablespoons salsa
Directions
Rinse and cook chicken thigh over medium heat in chicken broth until cooked through, about 20 minutes. I left the skin on until it was cooked and could be easily removed. When chicken is cooked and skinned, add seasoning and onion. Cook down until liquid is absorbed. Warm tortillas in another pan over medium heat. Lightly coat both sides of tortillas with cooking spray and heat until softened. Divide chicken and fill tortillas. Top with avocado and salsa.

    Delicious and simple. We even added some light sour cream and a little 2% shredded cheese and it is still under 500 calories. Thanks for a good summer time dish. - 4/12/11
