Thai Turkey Soup

4 oz. raw ground turkey1/2 cup bean sprouts1/4 cup scallions 2 tsp. minced garlic1/2 tsp ginger root1 tbsp. of soy sauce2 cups fat free chicken broth1 tbsp diced red chili pepper2 1/2 cups raw spinach1/4 cup cooked whole wheat egg noodles
1. In a non-stick skillet saute ground turkey with garlic and red chili.
2. When turkey has lightly browned transfer to a stock pot .
3. Pour some of the chicken broth into the skillet to loosen and browned bits then pour into stock pot along with the remaining broth, soy sauce, ginger, bean sprouts and scallions.
4. Bring to a boil, reduce heat and simmer for 15 minutes.
5. Add spinach and noodles. simmer for one minute.
6. Pour into a bowl and enjoy.
