Lemon Cream Cheese Delight

Corn Starch - 1/2 cupEgg Yolks - 3 largeSplenda - 2 cupsWater - 2 cupsCream Cheese - 16 ozLemon Extract - 1 tbl.
Combind 2 cups of water, 1/2 cup corn starch, 2 cups of Splenda granular sugar substitute, in a 3 quart sauce pan. Begin heating over medium heat setting. Add 16 oz of cream cheese to the mixture, and stir in until melted. and the mixture takes on a creamy consistance. Continue to heat just until boiling. Remove from the heat, spoon into six 8 oz. desert dishes. Refridgerate at least two hours berofe serving.
As an alternative you can use ramekins and continue preparation using the folloing directions. Place ramekins on a cookie sheet in the center rack of an oven that has been preheated to 375 degrees. Bake for 30 minutes. Turn oven off and let cool in the oven without opening the oven door for one hour. Move ramekins to the refridgerator and let cool for 2 more hours before serving. Try serving with fresh berries and a whipped topping like Cool Whip Free topping.
