middle eastern pita salad

Ingredients
One 7-inch whole wheat pita, toasted until crisp1 cup peeled, diced cucumber1/2 cup chopped tomatoes (halved cherries are good)3/8 cup tightly packed, finely chopped parsley1/6 cup pitted black olives, halved or coarsley chopped1/8 cup thinly sliced scallion greensfor the dressing1/8 cup olive oil1.5-2 tbsp lemon juice1/4 tsp minced garlic1/4 tsp sea salt
Directions
1. Break the pita into 1-inch bits
2. In a medium sized bowl, combine all salad ingredients
3. In a small jar, combine the dressing ingredients. Put the lid on the jar and shake well. Pour over the salad and toss until thoroughly mixed.
