Gluten-free Coconut Macaroons

Ingredients
5 1/3 cup sweetened shredded coconut1 1/3 cup granulated sugar1/2 tsp salt8 Tbsp coconut flour8 egg whites2 tsp almond extract
Directions
Preheat oven to 325*F.

Mix together coconut, sugar, salt and flour. Add egg whites and almond extract to dry mix.

For the easiest clean-up: line cookie sheets with foil, shiny side down, and grease the foil well or cookies will stick. I use coconut oil which works great and doesn't alter the taste of the cookie.

An ice cream scoop will produce exactly 18 cookies.

Bake for 20-25 minutes.
