Ingredients
Salmon Cakes:1 (14.75 ounce) can salmon, drained and flaked2 eggs, beaten1/4 cup of green onions, diced1/2 teaspoon ground black pepper1/2 teaspoon Old Bay Seasoning1/2 teaspoon salt1/2 teaspoon garlic powder1/2 teaspoon cayenne pepperA heavy squirt of lemon juice 2 tablespoons clarified butterBlackening Spice:Italian seasoningGarlic PowderGround Pepper
Directions
Serving Size: makes 7 servings

1. Pick through the salmon and remove any bones. In a mixing bowl, beat the eggs and add the diced green onion, salmon and seasoning. Mix thoroughly.

2. Shape into 2 ounce patties (about 7 patties). Heat butter in a large skillet over medium heat. Fry each patty for 5 to 7 minutes on one side or until crispy and golden brown. Sprinkle unfried side with Blackening Spice mixture and fry for 5 to 7 minutes or until a the spices form a crust.
