Black Bean Chili

Ingredients
1 can black beans - drained and rinsed well1 chopped jalapeno pepperapprox 2 T chopped red onionapprox 1 T chopped cilantroCanned fire roasted tomatos, drained and rinsed well3 garlic clovessprinkle of low fat mozzarella (optional)Crumbled goat cheese (optional)1/2 tsp cumin powder1 squirt lime juice2 T choopped Fire roated peppers (jarred)
Directions
drain and rinse all canned items (helps reduce the sodium). Put black beans in microwave safe bowl. Chop onions, cilantro, jalapeno, and peppers. Coarsley chop garlic and brown. When done toss with beans adding in lime juice and cumin. Sprinkle with cheese (optional) and microwave for 1 minute. Enjoy.
