2 Scoops Chocolate Mint Protein Powder4 Egg whites1/2 cup pumpkinStevia or Truvia to taste3/4 tablespoon Baking Powder1.5 tablespoons Unsweetened Cocoa PowderOptional Frosting (not included in nutritional information): Cut muffin in half and fill with a mix of 3 oz. Greek Yogurt, 1 packet Truvia and 3/4 tsp. Vanilla Extract
Blend all and bake in a 6-cup muffin pan. Bake at 350 degrees for 15 min. Top with natural peanut butter, sugar free syrup or vanilla cream frosting.
