Extra lean ground beef medallions, mushrooms and onions

Ingredients
1 lb extra lean ground beef1 package (8 oz, 227 g) sliced mushrooms1 onion, sliced
Directions
Season the meat with salt and pepper or your favorite seasoning. Divide into 10 sections, roll into a ball and flatten into a medallion. Heat a nonstick skillet, and put the medallions in, cover with the mushrooms and onions. Cook until the meat begins to form a dark brown fond, then flip over. Stir several times. Let cook over med to low heat with a top on.

Serving Size: makes 10 medallions, serving size is 2 medallions
