Mini Low-Fat Crustless Quiches

Ingredients
16 oz carton Egg Beaters - Cheese & Chive16 oz carton Egg Beaters - Southwestern1/2 cup chopped green onion1 package frozen spinach, thawed and drained1/2 cup low fat cheese (cheddar, marble jack, etc)
Directions
Mix all ingredients together and pour into 24 foil baking cups. Bake at 350 degrees for 14-15 minutes or until set. Freeze leftovers to use later.

To cook from frozen, remove foil cup and microwave for 20-30 seconds or until heated through.
