Czech Pork Roast

Ingredients
2 tablespoons canola oil1 tablespoon grain mustard2 tablespoons caraway seeds1 tablespoon garlic powder1 tablespoon salt2 tablespoons black pepper5 pounds pork roast3 medium onions1 cup beer1 tablespoon corn starch2 tablespoons butter
Directions
Combine oil, mustard, caraway seeds, garlic powder, salt and black pepper. Mix into paste and rub mixture on pork roast. Let sit for 30 minutes. Heat oven to 375 degrees. Slice onions and lay in bottom of heavy roasting pan. Place roast fat side down. Pour beer around the roast. Cover with foil or lid and bake for 1 hour. Remove foil and turn roast over to fat side up. Score fat and return to oven for 2 more hours or until internal temperature reads done. Let rest for 20 minutes before slicing. While resting, pur pan juices in saucepan and bring to a boil. Make a slurry with the cornstarch and add to gravy. Bring to low boil and cook until thickened. Add butter to finish.
