Buckwheat and Bowties

Ingredients
1/2 tbsp olive oil1/4 cup buckwheat2 carrots sliced1 cup veggie stock1/2 cup whole wheat bowtie pasta1 tbsp olive oil6 mushrooms sliced1 onion chopped
Directions
Heat olive oil, coat carrots and buckwheat in oil. Add veggie stock cover and simmer 15 minutes. Meanwhile cook pasta in boiling water drain and set aside. In a pan saute mushrooms and onions in 1 tbsp of olive oil until browned. Add buckwheat mixture and pasta. Season with salt pepper and parsley if desired.
