Indian Chicken w. Mint Mango Salsa

Ingredients
2 Garlic Cloves - minced4 tsp ground ginger1 tsp curry1 Lime1 Jalapeno - seeded & minced.5 C Plain Yogurt2 Tbs Olive OilSalt & Pepper4 Boneless , skinless chicken breasts1 Mango - peeled, pitted and diced2 Tbs mint - chopped
Directions
In a large bowl mix together all ingredients but chicken, mango and mint. Reserve 1 tsp ginger, .5 lime, and .5 jalapeno.

Once mixed, coat chicken in yogurt paste. Place on baking sheet and bake for 45 min at 375.

While chicken is baking, in a small bowl mix together mango, mint, jalapeno, lime juice and ginger. Toss until all ingredients are mixed well.

Serving Size: makes 4 breast servings & 4 Salsa servings
