Mushroom eggy bacon

Ingredients
1 tbsp oil1 medium onion2 slices bacon200g mushrooms sliced6 eggs200g lowfat yoghurt3 tsp mustard powder75g grated low fat cheese1/2 cup parsley chopped2 medium tomatoes sliced
Directions
cook bacon and onion in oil for 2 or three minutes, add mushrooms, and cook till softened.
Beat eggs yoghurt and mustard together, add to bacon mixture, garnish with tomato parsley and cheese and pour into an oven dish, cook for 20 to 30 minutes until firm in the centre and golden. Serves four
