Baked Acapulco Chicken

Ingredients
1 cup uncooked rice1 cup sliced mushrooms1 1/2 lbs boneless, skinless chicken breast - diced2 cups fat free chicken broth12 oz can fat free evaporated milk1 cup salsa (8 oz)1 cup shredded 2% sharp cheddar cheese
Directions
1) Layer uncooked rice and mushrooms in a sprayed 9x13 baking dish.
2) Place diced chicken on top of rice and mushrooms.
3) In a separate bowl, combine broth, evaporated milk, and salsa. Pour evenly over chicken.
4) Bake 40 minutes at 375 degrees.
5) Sprinkle cheese over dish, and bake another 5 minutes or until cheese is melted.
