French Tarragon Chicken Soup w/Ginger

Ingredients
2 celery stalks diced1 medium onion, diced4 medium carrots sliced2 slices of thick pepper bacon, cut into small pieces1 tbsp olive oil1 larger boneless, skinless chicken breast, cut into small bite size pieces.4 cups chicken broth1 1/2 cups water4 cups chopped swiss chard2 cups bok choi, choppedsalt and pepper to taste
Directions
Cook bacon pieces until crispy. Sautee celery and onions until tender, adding olive oil if needed. Add diced chicken, lightly browning it. Add carrots tarragon and ginger, sauteeing for 2 more minutes. Add broth, water, bok choi, and swiss chard. Bring to a boil, reduce heat to medium and simmer for 20 minutes.
