Veggie Egg White Omelet

Ingredients
2 large egg whites1 T green pepper1 T red pepper1 T onion1 T broccoli1 T celery1 T parmesan cheese, grated1 tsp olive oil
Directions
Chop all vegetables and saute in olive oil in a small frying pan until a bit tender. Remove veggies from pan and set aside. Whisk egg whites and add them to the pan the veggies were sauted in. Cook over medium heat until egg white is cooked. Remove from heat, top with sauted veggies and grated parmesan cheese. Fold over to turn into an omelet.

Makes one serving.

    I make this same recipe w/whatever vegies are in season. Instead of sauteing the veggies, I steam mine in the microwave for a minute or two until desired doneness. It is so yummy! Lots of flavor from the veggies. - 7/20/08
