Lentil Curry 1

Ingredients
Green Lentils (dry)Onions, dicedGinger, gratedGarlic (minced or pressed)Olive OilSaltCoriander seed (ground)Curry powder
Directions
Bring water to boil in a 3-quart (or larger) pot on stove top. Add all the ingredients at once, and allow to simmer for 20-30 minutes, uncovered, stirring occasionally. Cook until the lentils are tender. You might need to add more water--the end result should have a thick consistency. (Think hearty stew.) Goes great with bread or tortilla chips, or use as a side dish with vegetables.

The amounts of spices are more or less to taste. If you are watching your sodium, you can probably half the salt and it will still taste fine.
