Rob's Ground Venison Breakfast Casserole

Eggs, ground venison (w/added beef fat), mushrooms, onions, jack, colby, or Swiss cheese. Red or green bell pepper, red pepper flakes.
Brown 1 lb ground venison. (I add beef fat to mine. Straight venison is too dry). Chop the onion and saute with browning venison. Add chopped mushrooms and bell pepppers and heat through. Add red pepper flakes and salt and pepper to taste.
Beat the 5 eggs. Put mixture into a 2 quart casserole and pour the beaten eggs over the mixture. Stir lightly to mix evenly. Cover the entire surface with 8oz shredded cheese. Use colby jack if you like a mild flavor. Use Swiss or gruyere if you're more adventurous. Bake uncovered for 30 minutes or until eggs are set. Makes 6-8 servings.
