Potato Leek Soup

3 medium leeks3 T. olive oil4 organic russet potatoes8 cups organic low-sodium chicken brothpepper to taste1 cup skim milk
Clean and chop leeks into small pieces. Saute in 3 T. olive oil until very soft and starting to brown. Add the diced potatoes and saute, add pepper. Add 8 cups low-sodium chicken broth and bring to almost a boil, lower heat and simmer until potatoes are soft. Mash potatoes with a potato masher and add 1 cup skim milk. Serve with diced chives, and sprinkled cheddar, if desired.
