Baked butternut squash patties (Calabaza a la milanesa)

Ingredients
Neck of a butternut squash (about 500 gr)1 large egg1 cup bread crumbsCooking spray
Directions
Cut neck of a butternut squash into circles about 0.5 inch thick.
Deep in previously whisked egg and then into bread crumbs.
Spray a cooking sheet with cooking spray and arrange patties. Bake at medium heat until tender, turning once (about 20 minutes)
