"Hen in the Garden" Salad

Ingredients
juice of one lemon1 Tbsp mustard1 Tbsp salt-free chicken boullion6 tsp flax seeds, ground1 bunch parsley, chopped6 fresh Roma Tomatoes, diced12 hard boiled eggs, chopped1 yellow bell pepper, dicedsmall red onion, chopped2 Tbsp virgin coconut oil3 cups fresh baby spinach
Directions
mix lemon juice, mustard, boullion, and ground flax seeds together in the bottom of a large salad bowl

chop parsley, tomatoes, eggs, onion and yellow pepper
add to dressing and stir to coat

melt coconut oil and pour over salad

serve on a bed of baby spinach

Serving Size: 1/2 cup spinach + 1 cup egg salad
