Smoked Mackerel Stuffed Eggs

1 Smoked Mackerel FilletEgg, fresh, 4 large Dill 1 tbsp , fresh or driedHellmann's Extra Light Mayo, 3 tbsp
1. Hard boil eggs, wait for them to cook or run under cold water.
2. Peel, cut in half and scoop out the yolks.
3. Either finely chop, flake or blitz mackerel fillet in the food processor.
4. Mix together egg yolk, dill, mayo and fish, and fill the egg whites with the mixture.
Any oily fish will work well in this recipe- try using a can of sardines, smoked salmon or haddock. Alternatively, you can also use light cream cheese, soured cream or greek yogurt instead of mayo.
Serving Size: Makes 8 half-egg servings
