Ingredients

    1 can tuna in water (drained)
    1/3 c dried cranberries
    1/2 Fuji apple chopped
    1 green onion chopped
    2 tbs fat free miracle whip( to taste)
    Salt (to taste)
    Romaine lettuce

Directions

Mix all ingredients in a medium sized bowl except lettuce. Place lettuce on plate and top with tuna salad.
yield: 1 serving

This makes just one serving, calorie speaking, but its enough to feed an adult and two small children!

    I have made this recipe many times, and it's just as good with chicken as it is with tuna. Also, substituting raisins for the cranberries and adding celery is pretty awesome too! Very flexible recipe, as you can see, and very fresh and light. Jum jum!! - 1/14/08

    This was SO GOOD! It's got everything I was looking for: Protein, low fat, creamy, sweet, savory. It's awesome. Usually I'm hungry about two hours after lunch, but not with this! I ate it with two Wasa crackers and that's all I needed.
