Cherry Almond Cookies (Isa Moscowitz recipe)

Ingredients
* Canola Oil, 0.33 cup * Brown Sugar, 0.33 cup, packed * Granulated Sugar, 0.33 cup * Organic Light Plain Soy Milk - 3 tbsp* Flax Seed Meal (ground flax) - 2 tsp* Vanilla Extract, 1 tsp* Whole Wheat Flour, 1 cup * Salt, 0.25 tsp * Baking Soda, 0.25 tsp * Dried Cherries, 0.75 cup * Almonds (blanched, slivered), 0.75 cup
Directions
Preheat oven to 350F
In a large bowl, use a fork to vigorously mix oil, sugars, milk, flax seeds and extract. Sift flour, baking soda and salt. When combined, mix almonds and cherries
Drop onto baking sheets about 2 inches apart. Bake for 10-12 min. Let cookies rest on the baking sheet for 5 min and transfer to wire racks to complete cooling.
