Carrot apple raisin nut muffins

Ingredients
2 c. peeled and chopped apples1 c. golden raisins2.5 c. carrot pulp (from juicer).5 c. chopped walnuts2 c. whole wheat flour1 c. brown sugar2 tsp. baking soda2 tsp apple pie spice.5 tsp ground ginger1 c. honey6 egg whites.5 c. canola oil3.5 tsp pure vannila extract
Directions
Makes 24 regular muffins.
All the fat is healthy fat and you could use any flour you prefer. Multi grain is also very good.
I am sure you could use grated carrots inplace of carrot pulp, but would probably need to decrease amount by 1 cup because of the moisture.

These are an excellent grab and go breakfast or snack when made ahead and keep me satisfied well into the afternoon. I hope you enjoy them.

Preheat oven to 350% Grease (cooking spray) pans or use muffin cup.
Sift all dry ingredients together in large bowl mix well.
Add all fruit and nuts. Mix well.
Mix oil, honey ,vanilla and egg whites in bowl.
Add mixture to dry ingredients and just mix until well cobined.
Fill muffin cups and bake for 30 min or until they bounce back when touched on the top.
